OUR STORY

With sweeping views over rural landscape and the Indian Ocean, Eagle Bay Brewing Co is a microbrewery, restaurant and vineyard tucked away on the family farm, in the northwestern corner of the Margaret River wine region.

Eagle Bay Brewing Co is owned and operated from the ground up since 2010 by third generation local farming siblings Nick, Astrid and Adrian d’Espeissis. The property has been in the family since 1950 and the farm is still operational with the trio’s father John still farming the land that the building overlooks Cape Naturaliste.

Our beers are handcrafted and brewed in small batches and made with only four ingredients; freshly harvested rainwater, malted barley, yeast, hops and sunshine to power our brewery. We do not add any preservatives to our brews and we source quality ingredients from around the globe to bring you freshly brewed beer to your glass.

90 Day Pilsner 5.2%

Back again, this time with more hops!

The aim of this 90 day experiment was to develop a lengthy conditioning process to create the cleanest pilsner possible, and build a layered hop character through staggered dry hopping:
Day 26 – Motueka / Day 52 – Nelson Sauvin / Day 78 – Motueka

Lemon, lime and mandarin hop character balance the sweet almond and bread crust flavour from the combo of pilsner and ale malt, creating the perfect New World Pils.

Rotbier 4.6%

For this collaborative brew with friends Fox Friday Craft Brewery, we are leaning heavier into the retro side of our Modern Retro Lager Project. This classic German lager is a Rotbier (translation: Red beer) built on a base of rich pilsner malt, layered with Redback and Shepards Delight. Pouring a tawny amber red colour, with sparkling clarity and some herbal, noble hop notes to tie it all together.

Meet the dialled-up version of our classic Cacao Stout, say hello to Coco-Cacao Imperial Stout 8%. We’ve added more Papua New Guinea cacao husk for maximum dark chocolate flavour, bumped up the sweetness, jammed it full of toasted coconut flakes and launched it into imperial realm. Guaranteed to be your new fave vegan pastry stout, reminiscent of a certain beloved coconut choccy bar.

About Cacao husks: The cacao husks are a natural waste product from the chocolate making process by our good mates down the road Bahen & Co. They use real cacao beans for every bar of chocolate they make and we love being able to re-use the cacao husks in our beer.

Bringing the nostalgia with an old school malt revival! A touch of crystal malt and a good whack of local Munich malt keep the base strong and simple. Firm bitterness keeps malt sweetness in check, while a double dry hop of Simcoe, Citra Cryo and Mosaic Cryo packs the sort of punch synonymous with a West Coast IPA. Pouring with a touch of hop haze, it’s everything you can expect from a classic, old school IPA.

Cabernet Mixed Ferment – Blend 002 8.0%

CABERNET MIXED FERMENT –

Chardonnay barrel aged for 28 months with our house culture. Conditioned on hand picked Eagle Bay Vineyard cabernet skins for an additional 3 months. Pouring a light red-brown colour with peach and strawberry flavour, complimented by a natty wine acidity.

Wild Eagles – Blend 003 8.2%

The Hoops Project is an offshoot of our regular beer production, relying on the ebbs and flows of the ageing process to create something complex over the seasons.

Wild Eagles is a particularly special beer to us. Brewed in collaboration with 3 ravens Brewery. Head brewer, Brendan O’Sullivan, flew over to the South West with 15kg of house culture to enable us to kick start our own wild ferment program.

Amarone barrel fermented for 32 months, currently drinking beautifully, expect notes of raspberry, lime zest and apricot. Primary fermented with Saison yeast and dry hopped with aged Tardif de Bourgogne and Aramis.

We love super fresh beer, handcrafted and brewed in Eagle Bay for you all to sip, enjoy and repeat. Grab one of our growlers (or we are happy to fill up growlers from any of our beery friends) and fill it up with two litres of handcrafted happiness.

It's the perfect way to seal the freshness of your favourite pint or something you haven't tried before. Take it away and share with your fine self or some good friends or a little bit of both.

DRINK AND ENJOY

We really love good beer and we love making a freshly brewed beer for you. Take your growler out on tour and enjoy at any time and any place.

REPEAT

Once the last drop of beer has been poured give your growler a good rinse and head back to our place to re-fill, any day of the week from 11am daily.
