OUR STORY

With sweeping views over rural landscape and the Indian Ocean, Eagle Bay Brewing Co is a microbrewery, restaurant and vineyard tucked away on the family farm, in the northwestern corner of the Margaret River wine region.

Eagle Bay Brewing Co is owned and operated from the ground up since 2010 by third generation local farming siblings Nick, Astrid and Adrian d’Espeissis. The property has been in the family since 1950 and the farm is still operational with the trio’s father John still farming the land that the building overlooks Cape Naturaliste.

Our beers are handcrafted and brewed in small batches and made with only four ingredients; freshly harvested rainwater, malted barley, yeast, hops and sunshine to power our brewery. We do not add any preservatives to our brews and we source quality ingredients from around the globe to bring you freshly brewed beer to your glass.

Old School IPA beer in orange can.

Old School IPA 6%

Bringing the nostalgia with an old school malt revival! A touch of crystal malt and a good whack of local Munich malt keep the base strong and simple. Firm bitterness keeps malt sweetness in check, while a double dry hop of Simcoe, Citra Cryo and Mosaic Cryo packs the sort of punch synonymous with a West Coast IPA. Pouring with a touch of hop haze, it’s everything you can expect from a classic, old school IPA.

Cali IPA 6%

A gooey, tropical onslaught of hop character is balanced by a punchy bitterness in our latest IPA release. A dry hop of our all time fave hop Simcoe brings grapefruit and pine needle to the palate, before Freestyle hops Manilita drops a tropical bomb, backed up by a speciality selected lot Motueka, which we chose to provide plenty of dank, resinous complexity to this Californian style IPA. Finishing clean and crisp with a light malt profile, it’s the kind of IPA that will have you coming back for more.

India Red Lager 5.8%

Pouring the lighter side of red for just enough malt character, India Red Lager takes it’s inspiration from West Coast IPA’s of old with a modern hop tweak and a long, cold seven week lager ferment and conditioning period. Cryo Mosaic provides a hit of dank, piney hop character that mixes with the new school kaffir lime and rich sauvy blanc of Nelson and Sabro.

Black and Tannin 7.9%

Black and Tannin is a Black IPA, barrel-aged in a mix of our Eagle Bay Vineyard Chardonnay and Cabernet barrels for six months. The brew was then blended and triple dry-hopped with Simcoe, Mosiac and Southern Cross which delivers punchy dank, citrus and pine hop characters alongside a super dark and roasty profile.

It’s the final brew of a three-part series with our good friend’s Mane Liquor and Perth Artist Kyle Hughes-Odgers.

90 Day Pilsner 5.2%

Back again, this time with more hops!

The aim of this 90 day experiment was to develop a lengthy conditioning process to create the cleanest pilsner possible, and build a layered hop character through staggered dry hopping:
Day 26 – Motueka / Day 52 – Nelson Sauvin / Day 78 – Motueka

Lemon, lime and mandarin hop character balance the sweet almond and bread crust flavour from the combo of pilsner and ale malt, creating the perfect New World Pils.

My Friend Nelson is a showcase of our good friend from across the ditch, Nelson Sauvin. ⁣⁣

A single hop IPA brewed with hops from our friends based in Nelson, NZ, calledFreestyle Hops.

A heavy dip hop exaggerates the rich Sauv Blanc character of Nelson Sauvin, while a heavy dry hop allows us to express big lime + passionfruit notes. ⁣⁣

Chardonnay barrel aged for 28 months with our house culture. Conditioned on hand picked Eagle Bay Vineyard cabernet skins for an additional 3 months. Pouring a light red-brown colour with peach and strawberry flavour, complimented by a natty wine acidity.

Fig and Yuzu Brett Saison (Blend 005) – 8.8%

The Hoops Project is an offshoot of our regular beer production, relying on the ebbs and flows of the ageing process to create something complex over the seasons.

Using the same base beer as our original Blend 001, Brett Saison (naturally soured with lactobacillus bacteria and fermented with French saison yeast), Fig and Yuzu Brett Saison has then been secondary aged Chardonnay barrel for 4 years. Conditioned on Manjimup grown Fig Puree for 6 months and Donnybrook grown Yuzu zest for 3 months.

Years in the making, this is a very special beer with sweet fig, yuzu acid and Chardonnay oak complexity.

Wild Eagles – Blend 003 8.2%

The Hoops Project is an offshoot of our regular beer production, relying on the ebbs and flows of the ageing process to create something complex over the seasons.

Wild Eagles is a particularly special beer to us. Brewed in collaboration with 3 ravens Brewery. Head brewer, Brendan O’Sullivan, flew over to the South West with 15kg of house culture to enable us to kick start our own wild ferment program.

Amarone barrel fermented for 32 months, currently drinking beautifully, expect notes of raspberry, lime zest and apricot. Primary fermented with Saison yeast and dry hopped with aged Tardif de Bourgogne and Aramis.

We love super fresh beer, handcrafted and brewed in Eagle Bay for you all to sip, enjoy and repeat. Grab one of our growlers (or we are happy to fill up growlers from any of our beery friends) and fill it up with two litres of handcrafted happiness.

It's the perfect way to seal the freshness of your favourite pint or something you haven't tried before or one of our unique Single Series draught only brews. Take it away and share with your fine self or some good friends or a little bit of both.

We really love good beer and we love making a freshly brewed beer for you. Take your growler out on tour and enjoy at any time and any place.

REPEAT

Once the last drop of beer has been poured give your growler a good rinse and head back to our place to re-fill, any day of the week from 11am to 5pm daily.
