Eagle Bay Brewing Co. is a family-owned, independent craft brewery deep in the heart of Cape Naturaliste, just 10 mins outside of Dunsborough. Founded in 2010 by siblings Nick, Astrid, and Adrian d’Espeissis, the family has been farming the land since 1950.

We’re proudly independent and committed to crafting high-quality, preservative-free beers brewed with freshly harvested rainwater and locally sourced ingredients, powered by sunshine thanks to our solar panels.

Our brewery produces a core range of approachable brews like Kolsch, Pale Ale, XPA, and Lager. They are all designed for sharing with friends on a sunny afternoon, or on adventures in the South West. Our Eagle Bay home crafts, brews and cans every beer on-site with our brew crew and quality control lab tech, always chasing the goal to deliver the ultimate beer experience.

Complementing our brews is our extensive Eagle Bay Vineyard wine list and seasonal menu. Curated by Head Chef Josh De Caen, our menu showcases wholesome dishes made from fresh, local produce. Come for the beer, stay for the experience.

Our Premium Craft Beer Brewing Process

Our thoughtful brewing process uses only four ingredients; freshly harvested rainwater, malted barley, yeast, and hops, with sunshine powering the brewery.

Steering clear of preservatives or additives, we put love and attention into every drop to ensure unmatched freshness. Inspired by classic styles, our beers are reimagined for balance and ‘sessionability’, making them perfect for enjoying in the sunshine with mates.

As one of the Margaret River region’s oldest and most established breweries, our Core Range embodies all the adventure, fun, and excitement of the South West.

Maibock 6%

Meet our Maibock, to celebrate the cooler seasons with a slightly darker and approachable brew to enjoy. Brewed with Pilsner, Vienna and Munich malts with an extended boil time to develop a golden amber colour. Beautifully rich notes of freshly toasted bread compliment a balanced bitterness and hint of spice, to round out this malt driven German Classic. Best enjoyed during the cooler seasons of West Oz.

An IPL like no other, this juicy number features punchy citrus and bright tropical fruits thanks to Galaxy and Motueka, plus some Nelson Sauvin to pay homage to our OG IPL recipe.

THE TASTING NOTES
Mandarin, lemon and lime balance a rich malt body that hides beneath. Pilsner and ale malt provide a crisp mouthfeel with subtle bread and a biscuit character that lingers throughout. A modern day pils best matched with our iconic West Oz summer arvos.

We collaborate with local hop farm Margaret River Hops to create a Pilsner where old world meets new world, and locally grown and harvested ingredients meet the best global additions.

Sourcing exceptional floor-malted Bohemian Pilsner malt directly from the Czech Republic and WA grown and malted Pilsner malt from Mallokup Malt, along with intensely aromatic Beedelup and Victoria hops from Margaret River Hops, this beer delivers a moreish bready and biscuity malt profile and bright stone fruit, herbal and citrus characters from the local hops, which are delivered to the brewery and used for dry hopping within ten days of being picked.

Old School IPA 6%

Bringing the nostalgia with an old school malt revival! A touch of crystal malt and a good whack of local Munich malt keep the base strong and simple. Firm bitterness keeps malt sweetness in check, while a double dry hop of Simcoe, Citra Cryo and Mosaic Cryo packs the sort of punch synonymous with a West Coast IPA. Pouring with a touch of hop haze, it’s everything you can expect from a classic, old school IPA.

Five years of collaborating, brewing, and enjoying Oaked Vienna Lager with our good friends at Copper & Oak — an ode to our love of lager, best enjoyed over the cooler months of the year.

A modern take on a euro classic, our Vienna Lager’s rich caramel and biscuit malt base was cold conditioned for five weeks on French oak chips, creating gentle complexity and depth, with a rounded mouthfeel and a deliciously crisp finish. A modern interpretation of a classic European style, brewed for timeless drinkability.

Wild Eagles – Blend 003 8.2%

The Hoops Project is an offshoot of our regular beer production, relying on the ebbs and flows of the ageing process to create something complex over the seasons.

Wild Eagles is a particularly special beer to us. Brewed in collaboration with 3 ravens Brewery. Head brewer, Brendan O’Sullivan, flew over to the South West with 15kg of house culture to enable us to kick start our own wild ferment program.

Amarone barrel fermented for 32 months, currently drinking beautifully, expect notes of raspberry, lime zest and apricot. Primary fermented with Saison yeast and dry hopped with aged Tardif de Bourgogne and Aramis.
